Zelen
Zelen is the most famous indigenous variety of Vipavska dolina, which due to limited supply is still hard to come by. It is produced according to the old Vipava method that requires the initial phase of vinification be carried out in open containers and only later moved to large closed barrels.
Our wine cellar is one of the rare few that age the Zelen variety in large oak barrels. This bestowes a high degree of complexity and herbaceous character on the wine. It is ideal for culinary feasts.

FEDORA’S STORIES
We enjoy wine. It makes us ponder, take pleasure, remember. We tell stories of Fedora and of the history of our family and our home. Are they true, altered, or fake? We let you be the judge. Every wine has its own story.
Friends
The youth made them inseparable friends. They did everything together. One was a hunter, the other a dog. One caught animals, the other caught rays of sunshine in the forest, condensing them into sweetness on the bottom of his glass. Then one day, frolicking carefree through the woods, they heard a noise in the bushes. The dog rushed towards it while the hunter prepared his rifle and already imagined getting another feather tho adorn his fedora. But for a brief moment, a beam disturbed his aim, his rifle trembled and fate stole the life of one that was dearest to him. This was the last time the hunter touched a gun. Since then he has decided to become a mere observer of his forest. And, stunned by all the shades of green, he started catching the sun’s rays and condensing them into sweetness that fills our glasses.

Description
Light-yellow colour with intense shades of green . The bouquet reminds of the Christian thurible, dry apricots and Mediterranean herbs. There is a note of minerality of wet granite. On the palate, Zelen is dry and oily, with a long aftertaste. It is suitable for immediate consumption, or further ageing for up to five years.
